Project Linus is an excellent charity, which provides quilts and other handmade blankets to children that have been through some sort of illness or traumatizing event. There are chapters all over the US and they accept donations of everything from finished quilts, crocheted/knitted blankets quilts, tied comforters, fleece blankets, crocheted or knitted afghans, and receiving blankets in child-friendly colors to materials and supplies. Have a lot of fabric that you just aren't using?, they would love to take it off your hands. Many chapters will also provide you with fabrics to make quilts/blankets from or accept a finished quilt top and do the rest for you. Blankets must be homemade, washable, free of pins, and come from smoke-free environments due to allergy reasons. Blankets can be as small as 36" x 36" and individual chapters will usually let you know what size they most need.
